Recipe for Indian Flavoured Rice In 20 Steps – Zafrani Ghee Rice

(Serves 3)
Ingredients:
- 1.5 Cup Rice (Basmati preferably)
- 4.5 tbsp clarified butter (ghee)
- 15 cashews
- 1 medium sized onion thinly sliced
- 0.5 tsp salt
- 2.25 inches cinnamon stick
- 4.5 cardamom pieces
- 4.5 cloves
- 3 single thin strands of mace
- 6 balls of black pepper
- 1.5 Bay Leaf
Procedure:
- Wash the rice and keep draining till the water runs clear.
- Soak it in potable water for 40 minutes.
- Take 15 cashews and soak it in a separate bowl of hot water
- Once the rice is soaked, take a deep vessel and pour in 4 tbsp of clarified butter.
- Add all the spices (cinnamon stick, cloves, mace, pepper, bay leaf)
- As soon as the spices start crackling, add 3/4 of the sliced onions. Make sure you dont burn the spices and add the onions quick enough.
- Sautee the onions till they are golden-brown in colour or caramelised.
- Now, drain out the water from the soaked rice, and add the grains to the vessel.
- Gently stir and coat the rice with all the clarified butter and spices.
- Add 2.75 cups of water to the vessel.
- Add 1/3 tsp of salt.
- Mix very well and try to get the spices on top.
- Cover the vessel and let it simmer on low flame till all the rice is cooked.
- Keep checking the rice, and after 15 minutes, check if all the water is soaked up and the rice is cooked/fluffy.
- Make sure the spices dont burn so don’t leave the rice unattended for too long.
- Once the rice is cooked, turn off the heat and let it stay for a couple of minutes on the stove to take in the excess heat.
- Transfer the rice to a serving dish.
- Now, in a separate pan, sautee cashews and the remaining onions in clarified butter till they are golden-brown. Make sure they dont get black and burnt.
- Drizzle this entire mixture of the cashews and onions in clarified butter on top of the rice in the serving dish and spread evenly.
- Serve hot with a side of curry or just enjoy the strong flavours and eat it plain!
